frosting/meringues double duty!

happy sunday all!

are you ready for some yummies?

well this recipe is a two for one!!

white fluffy icing.....
and
toasted marshmallow meringues

i made a dozen yummy vanilla cupackes
make holes in them with a skewer
mixed jello with 1 1/4 c boiling water
and poured 1 tbsp over each cupcake

and now for the icing...

1/3 c water
1c sugar
1/4 t cream of tartar
1 t vanilla
2 egg whites

bring water, sugar and cream of tartar to a boil.
whip egg white to just before a soft peak.
add vanilla and whip until soft peaks form.
while mixer is running pour in (still hot)
water/sugar mixture and beat until
stiff peaks form. move to a piping
bag and frost cupcakes or a cake.

now pipe meringues onto a lightly greased
pan. bake at 350 for 10 minutes. lower oven
temp to 250 and bake for 30 minutes.
shut off oven heat crack open door and
let sit in oven for an hour.

there you go 2 desserts in one!
